Kadhi is a very simple, easy to make, flavourful and healthy side dish. It is served along with rice or Khichdi in most Gujarati house.
Kadhi’s base is made with yogurt and chick peas flour. To it green Chilli, ginger, curry leaves, salt and sugar are added (Turmeric powder can also be added) along with whole spices like Bay leaf, peppercorns, cloves and cumin.
Kadhi
Khichdi is a staple diet at my home. We make it at least once a week along with Bateta vatana nu saak (Potato and peas curry).
If you are looking for a flavourful, healthy and easy to make Indian meal try making
Baingan Bharta(Minced spicy egg plant) , along with Vegetable Khichdi and Kadhi. Accompany it with papad, buttermilk, cut onions and roasted green Chilli.
Here is a step wise recipe along with pictures – “How to make Gujarati Kadhi”
Ingredients :
Makes for 3-4 person
“To make base”
150 grams of yogurt
75 grams of chick peas flour (Besan)
1/2 tea spoon ginger paste
1 tea spoon green chilli paste
salt to taste
1 tea spoon Sugar
Pinch of turmeric
“For tempering”
1 table spoon Ghee (Clarified butter)
Pinch of asafoetida powder
1 tea spoon cumin seeds
3-4 curry leaves
1 bay leaf
4-5 cloves
3-4 peppercorns
Instructions:
1) In a bowl add all ingredients listed under “To make base”, whip it up with hand blender. Boil it for about 5-6 minutes. (Optional : Turmeric powder can be added at this stage, I have not added).
2) Heat up Ghee in another vessel, get the smallest one. To it add all ingredients listed under “For tempering” in the same sequence as mentioned.
3) Add the tempering to the base and mix it thoroughly.
4) Let it boil for 2-3 minutes more. It is ready to be served.

I never would have thought to combine yogurt with chickpea flour. Very interesting! I’ll look for the flour and hope to make it. It looks very tasty.
