This dish is a perfect marriage between Thai and Indian Cuisine. It has all the basic ingredients of authentic Thai Pineapple rice, with a touch of Tomato and Indian red Chilli. It can be served as a main dish and you would not need a thing else to accompany it.

Authentic Thai Pineapple rice is sweet and does have egg in it, mine is a complete vegetarian adaptation of it. I did give it an Indian flavour by adding Tomato, whole red chilli and garlic Paste. It makes the base for this rice. This version of Pineapple Rice has all the taste in one bite, sour, sweet and spicy.
To add crunch add cashew nuts, along with Salted Peanuts and fried Paneer (Cottage Cheese) or Tofu. It is garnished with Spring onions greens and Fresh Coriander. Before serving squeeze a dash of lemon and tamarin sauce (Soya sauce).
Left over rice taste good as well. If you have precooked rice these dish can be made in less than 25-30 minutes. You won’t regret making a fresh batch of rice just to make this.

“Ingredients”
2 ½ cup cooked Rice
1 table spoon Coconut Oil
1 ½ cup pineapple cut into cubes
½ cup green and red bell pepper cut into cubes
1 spring onion greens finely chopped
6-7 cashew nuts (Preferably raw)
“Condiments”
1 tea spoon tomato sauce
1 table spoon chilli sauce
1 table spoon tamarind sauce (Soya sauce)
1 tea spoon vinegar
Salt to taste
“To make tomato paste”
1 cup tomato Puree
10 red chillies soaked in oil
6 cloves garlic
“To serve”
Fried Paneer / Tofu
Salted peanuts
Roasted Cashew nuts
Fresh coriander
Spring onions green
Lemon slice
Tamarin sauce
“Instructions”
- In a food processor add all ingredients listed under “To make tomato paste” churn it. Keep it aside for later use. Alternatively If you do not have Tomato puree, boil tomatoes in water, remove peel, let it cool add it to food processor along with other ingredients listed under “To make tomato paste”.
- In a pan add coconut oil, to it add pineapple. Let it caramelise for about 2-3 minutes, add bell pepper to it cook for 3 minutes more, add spring onion greens and the tomato paste.
- Add cooked rice to it along with raw Cashew nuts and all the Ingredients listed under “Condiments”. Mix it well.
- Serve it along with Ingredients listed under “To serve”.
