It was a lovely Friday evening, when my friends and I had been to Arab street. It is one of the oldest street in Singapore, featuring first generation shop house spotted on left side of picture above. According to Wikipedia earlier it was residence to Arab community in Singapore. It is revamped in past few years still preserving Arabic colour and culture. Street is lined up with boutique shops selling sarongs, Persian carpets, fabrics, fancy lamps, baskets, accessories and eateries serving middle eastern cuisine.
We spent the evening by soaking in the atmosphere, catching up with each other, shopping and eating. We had ordered classic Arabic cold Mezze Platter which included traditional Hummus, Babaghanouj, Moutabel, Falafal and Pita bread. That day when I returned home I thought of giving Hummus an Indian touch. That is how I came up with this Healthy Sandwich.
In this I have used :
- Indian flavoured hummus (It gives this sandwich a unique flavour)
- Fresh green beans sprouts
- Pickled onions
- Fresh vegetables (Lettuce, cucumber and tomato)
- Walnut bread.
I have made everything at home from scratch. I am sharing whole process stepwise with pictures.
To make hummus refer to my recipe for Indian flavoured Hummus <- here . It is a very easy recipe made with chickpeas, tahini (Sesame paste), lemon juice, garlic, olive oil and Indian Spices.

To pickle onions, cut onions into thin long strips place it in an airtight jar. In a pan take water enough to cover onions, bring it to boil. To it add sugar, salt and vinegar. Add the mixture to onion and let it refrigerate for at least 1 day. Pickled onions can last for 3-4 days in refrigerator.
To assemble Healthy Hummus sandwich, toast bread slice. I am using walnut bread, any whole grain bread could be used. Take lettuce, cut cucumber and tomato rings and we are good to go. By the way, You always have a choice to select any fresh vegetable available in market near you like carrots, beat roots and colourful bell peppers. By doing this it will make sandwich more filling and nutritious. Apply a thick layer of Indian flavoured hummus on all four bread slice, followed by fresh lettuce, vegetables, sprouts and pickled onions. Seal with another bread. That is it… Indulge into healthy Rhylisious sandwich.

4 Table spoon Indian Flavoured Hummus
100 gms Lettuce
6 Slice of cucumber
2 Slice of tomatoes
100 gms sprouts
4 table spoon pickled onions
4 Slice of walnut bread
- Assemble all ingredients. Toast 4 slice of bread.
- Apply thick layer of Indian Flavoured hummus on all 4 bread slice.
- Layer lettuce, sprouts, fresh vegetable and pickled onions.
- Seal it with a bread slice.
